Cafe Blog


So this blog is sadly, sadly neglected. I intended to be active with cooking a couple of years ago but it clearly has failed. But! All is not lost! Sorta. I still don't cook. But, I just made a new blog dedicated to cafes across Toronto, Ontario! You can check me out at www.torontocafes.blogspot.com! Due to a high demand for a cafe blog among my friends on Facebook, I finally created The Toronto Cafe Blog a couple of days ago. Check it for reviews on cafes across Toronto! I will be a lot more active over on that blog compared to here haha.

English Muffin Pizzas

Yet again, I haven't cooked for ages! Recently, I went to a house party and at last minute, I wanted to bring over appetizers. So I quickly googled the easiest recipe that I could possibly do and found english muffin pizzas!

I forgot which site I took the recipe from, but it's quite easy and yummy!


Ingredients 
- english muffin halves
- spaghetti sauce
- cheese of your choice (diced into small pieces)
- pepperoni slices

Directions
1. Preheat oven at 375 degrees
2. Spread a spoonful of spaghetti sauce on top of each english muffin half. Top with cheese and then 2-3 pepperoni slices (I cut each slice in half).
3. Bake for approximately 15 minutes or until cheese has melted and browned on the edges.

Quesadillas

So I haven't updated this blog since last summer. Since first year of university is over, I decided that for this four months of summer vacation, I would cook some more.

Lately I have been craving for some Mexican food and decided to take it in my own hands to make something easy! The result:




Ingredients

diced onions
diced tomatoes
diced lettuce
diced coriander
(optional) leftover chicken or beef
whole wheat tortilla/wrap
Cheez Whiz
less than a tablespoon of olive oil

Directions

Check out the link above. Instead of lettuce to the side though, I added shredded lettuce into the quesadilla at the very end. As well, I spreaded Cheez Whiz all over the wrap because I didn't have regular cheese.

Results

I much prefer it with chicken than having it plain vegetarian. I find this to be a yummy healthy lunch that can easily be made!

Sex in a Pan

Sex in a Pan


Ingredients

1/2 cup margarine, melted
1 cup chopped pecans
1 1/2 cups graham cracker crumbs
1 (8 ounce) package cream cheese
1 cup confectioners' sugar
4 cups frozen whipped topping, thawed
1 (3.9 ounce) package instant chocolate pudding mix
1 (3.4 ounce) package instant vanilla pudding mix
3 cups milk
1 (1 ounce) square unsweetened chocolate, melted

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. To Make Crust: In a medium bowl, mix together margarine, pecans and graham cracker crumbs. Pat into a 9x13 inch baking pan. Bake in preheated oven for 20 minutes or until lightly browned; allow to cool completely.

3. In a medium bowl, beat together cream cheese and confectioners sugar until smooth. Fold in 1 cup of the whipped topping. Spoon mixture into graham cracker crust.

4. Prepare chocolate and vanilla puddings with milk as per package directions. Allow pudding to set before pouring on top of the cream cheese layer. Spread remaining 3 cups of whipped topping over pudding layer; swirl melted chocolate throughout whipped topping.

5. Cover and refrigerate for about an hour. For leftover pie, keep frozen in a tightly covered container. When ready to eat, just cut off a piece and allow to thaw; keep rest frozen.

Changes I Made:

- Instead of margarine, I used butter. They are the same thing anyway.
- Instead of frozen whipped topping, I just used a regular whipped topping can.
- Couldn't find any unsweetened chocolate. So I had leftovers of Nutella spread and used that, melting it a little in the microwave. Works perfectly.

Any Screw-ups?

Yes. For the chocolate pudding, direction said to put it in the microwave for 7-8 minutes. 7-8 MINUTES?!? Cooking for the first time after two years (and first by myself), I didn't want to screw this up. So I put it for 7 minutes. With 2 minutes left, it exploded. I had to scrape whatever was left in the bowl and on the spinny glass of the microwave for the cake.

Results

Not bad. The kids love the cake and my mom said it's pretty good too. I like it though it is waaay too unhealthy, haha. I think it would be a great snack to make when bringing it over to a party. It's quite similar to an ice cream cake.

Introduction


Food is one of the many things I appreciate in life and oh how I do appreciate them. However, I don't necessarily cook. My mom tries to force me to help her in the kitchen but I'm not exactly keen on making things I'm not interested in.

But now, I'm willing to change this since I decided a couple of days ago to make a layered cake for my dad's birthday. (I think watching the Food Network at the gym too much affected my brain). I'm entering university and I think around this age I should start picking up on some new things (aka cooking). I have no idea if I will be updating this blog a lot because I do get lazy whenever I plan to cook. But whatever I make, I will try to post it here!
